Bruschetta in Springtime

Ingredients

  • 1 slice of Italian bread
  • 1 cabbage leaf thinly sliced. Use inner leaves only
  • 1 small carrot grated
  • 1 tsp green pepper finely chopped
  • 2 tsp mayonnaise
  • ½ tsp cumin seeds
  • Extra virgin olive oil

Method

  • Mix the washed and dried vegetables with the mayonnaise, keep to one side
  • Toast the cumin seeds in a frying pan, take off the heat and pour into a mortar and grind to a powder
  • Toast the bread on both sides, lay on a plate and dampen slightly with olive oil
  • Cover the toast with vegetables and sprinkle with the cumin seed powder
  • Serve
