Bruschetta in Springtime

Ingredients
- 1 slice of Italian bread
- 1 cabbage leaf thinly sliced. Use inner leaves only
- 1 small carrot grated
- 1 tsp green pepper finely chopped
- 2 tsp mayonnaise
- ½ tsp cumin seeds
- Extra virgin olive oil
Method
- Mix the washed and dried vegetables with the mayonnaise, keep to one side
- Toast the cumin seeds in a frying pan, take off the heat and pour into a mortar and grind to a powder
- Toast the bread on both sides, lay on a plate and dampen slightly with olive oil
- Cover the toast with vegetables and sprinkle with the cumin seed powder
- Serve
