Italian Frittata

Ingredients
- 4 tbsp olive oil
- 5 small onions
- 440g/4oz can tomatoes drained & chopped
- 125g/4oz Prosciutto ham
- 30g/1oz Parmesan Cheese
- 2tbsp fresh parsley/chopped
- ½ tsp marjoram
- ¼ tsp basil
- ¼ tsp salt
- ¼ tsp ground black pepper
- 6 eggs
- 30g/1 oz butter
- Parsley/grapes for garnish
Method
- Heat oil in frying pan
- Stir in onions and cook over medium heat until translucent.
- Add tomatoes and cook for a further 5 mins
- Drain and remove into a large bowl, cool at room temperature
- Mix prosciutto ham, cheese, parsley, marjoram, basil, salt and pepper into cooled tomato mixture.
- Whisk eggs in small bowl, stir into prosciutto mixture.
- Preheat grill.
- Heat butter in large frying pan over moderate heat until melted and bubbly: reduce heat to low.
- Add egg mixture to frying pan, spread evenly. Cook over low heat 8-10 mins until all but top mixture is set, shake pan gently to test. Do not stir.
- Grill egg mixture about 4 inches away from heat 1-2 mins, until it sets.
- Can be served hot or cold, cut into wedges, add garnish and serve.
