Mixed Meat Antipasti

Ingredients

  • 1 Cantaloupe melon
  • 55g/2oz Italian salami, thinly slice
  • 8 slices prosciutto
  • 8 slices bresaola
  • 8 slices mortadella
  • 4 vine tomatoes thinly sliced
  • 4 fresh figs, quartered
  • 115g/4oz black olives, stoned & halved
  • Few shredded basil leaves
  • 4 tbsp extra virgin olive oil

Method

  • Cut the melon in half scoop out & discard seeds
  • Cut flesh into 8 wedges
  • Arrange wedges on one side of large serving platter
  • Arrange the salami, prosciutto, bresaola & mortadella in loose folds around the other side of platter
  • Arrange the tomato slices & figs across the center of platter
  • Scatter the olives over the top, sprinkle the basil over tomatoes
  • Season to taste & drizzle with olive oil
