Amaretto Truffles
I make these lovely sweets at Christmas, put them in a pretty box with some tissue paper and give them to friends and family. They are so easy to make and people always enjoy opening a home made gift. See cooks tip.

Ingredients
- 4 oz/114g semi-sweet chocolate
- 1/4 cup unsalted butter
- 1 tbsp amaretto liqueur
- 1/2 cup finely chopped almonds
Method
- Melt the chocolate in a glass bowl over a saucepan of hot water remove from heat.
- Stir in the Amaretto. Add the butter, a tablespoon at a time, beating with a whisk until smooth and creamy.
- Chill 5 to 10 minutes to firm the mixture. Drop by teaspoon and roll into almonds.
- Keep truffles refrigerated until ready to serve.

- If you're going to give them as presents, keep them in the fridge, you can wrap them up in your presentation box and just take them out when your ready to go, this will keep them at their best.
