Ham and Egg Bruschetta

Ingredients

  • 1 slice Italian bread
  • 1 fresh egg
  • 1 slice dried cured ham such as Prosciutto
  • 1 slice of fresh curd roughly cut (or 1 tbsp Philadelphia cream cheese)
  • 1tbsp fresh milk
  • 1 teaspoon olive cream (Tapanade)
  • Few small lettuce leaves
  • 1 black olive cut in half

Tapanade (olive cream)

  • 10 Black olives pitted
  • 2 Garlic cloves
  • 4 tbsp Extra virgin olive oil
  • Put the Tapanade ingredients into a blender and pulse until mixture becomes a course but spreadable mixture, add more olive oil if needed

Method

  • Whisk the egg, milk and cheese together,(as you would for scrambled egg)
  • Allow to simmer until the egg is cooked and the cheese melted
  • Take off heat
  • Toast the bread both sides and spread one side with the olive cream
  • Cover with a lettuce leaf
  • Add slice of ham
  • Pour the egg and cheese mixture over the top
  • Garnish with a black olive
