Marinated Raw Beef

Serves 4

Ingredients
- 200 g/7 oz fillet of beef, in 1 piece
- 2 tbsp lemon juice
- salt and pepper
- 4 tbsp extra virgin olive oil
- 55 g/2 oz Parmesan cheese, shaved thinly
- 4 tbsp chopped fresh flat-leaved parsley
- Lemon slices
Method
- Using a very sharp knife, cut the beef fillet into wafer-thin slices and arrange on 4 individual serving plates.
- Pour the lemon juice into a small bowl and season to taste with salt and pepper. Whisk in the olive oil, then pour the dressing over the meat.
- Cover the plates with clingfilm and set aside for 10-15 minutes to marinate.
- Remove and discard the clingfilm.
- Arrange the Parmesan shavings in the centre of each serving and sprinkle with parsley.
- Garnish with lemon slices and serve with fresh bread.
Variation
- Substitute fresh, uncooked tuna for the fillet of beef. Do not use thawed frozen fish, and eat on the day of purchase.
Cooks Tip
- Place the beef in the freezer for about 30 minutes, you will find it easier to slice.
