Mixed Meat Antipasti

Ingredients
- 1 Cantaloupe melon
- 55g/2oz Italian salami, thinly slice
- 8 slices prosciutto
- 8 slices bresaola
- 8 slices mortadella
- 4 vine tomatoes thinly sliced
- 4 fresh figs, quartered
- 115g/4oz black olives, stoned & halved
- Few shredded basil leaves
- 4 tbsp extra virgin olive oil
Method
- Cut the melon in half scoop out & discard seeds
- Cut flesh into 8 wedges
- Arrange wedges on one side of large serving platter
- Arrange the salami, prosciutto, bresaola & mortadella in loose folds around the other side of platter
- Arrange the tomato slices & figs across the center of platter
- Scatter the olives over the top, sprinkle the basil over tomatoes
- Season to taste & drizzle with olive oil
