Beer Bread

Makes 1 Loaf

Ingredients
- 1 pkt Bountiful Beer Bread Mix 19oz/538g
- 12 fl oz Carbonated water
- 2 Tsps Pesto
- 10 small slices of oven roasted tomatoes (in olive oil)
- Small handful of fresh basil, chopped and soaked in olive oil
- 1 Tsp Parmesan cheese
- 15ml Extra virgin olive oil
- Small handful of fresh chopped basil
Method
- Mix the basil into the olive oil and set aside
- Pour the flour mix into a large bowl
- Add the carbonated water and mix well for 30 seconds ( See Cook’s tips)
- Mix in 10 thinly slices of oven roasted tomatoes(drained)
- Add the Pesto and thoroughly incorporate into the mixture
- Pour into a greased 1lb loaf tin
- Sprinkle the parmesan cheese on top
- Bake in a preheated oven to 45 minutes
- Bread should be risen
- Take out and pour the basil in oil over the top( See Cook’s tips)
- Return to the oven and bake for approx 10 more minutes
Cook's tips
- Use your hands to mix all the ingredients, it’s easier
- I just opened the oven door and poured the basil in oil over the top
