Beer Bread

Makes 1 Loaf

Ingredients

  • 1 pkt Bountiful Beer Bread Mix 19oz/538g
  • 12 fl oz Carbonated water
  • 2 Tsps Pesto
  • 10 small slices of oven roasted tomatoes (in olive oil)
  • Small handful of fresh basil, chopped and soaked in olive oil
  • 1 Tsp Parmesan cheese
  • 15ml Extra virgin olive oil
  • Small handful of fresh chopped basil

Method

  • Mix the basil into the olive oil and set aside
  • Pour the flour mix into a large bowl
  • Add the carbonated water and mix well for 30 seconds ( See Cook’s tips)
  • Mix in 10 thinly slices of oven roasted tomatoes(drained)
  • Add the Pesto and thoroughly incorporate into the mixture
  • Pour into a greased 1lb loaf tin
  • Sprinkle the parmesan cheese on top
  • Bake in a preheated oven to 45 minutes
  • Bread should be risen
  • Take out and pour the basil in oil over the top( See Cook’s tips)
  • Return to the oven and bake for approx 10 more minutes

Cook's tips

  • Use your hands to mix all the ingredients, it’s easier
  • I just opened the oven door and poured the basil in oil over the top
