Italian Main Dishes
Everyone would agree Italy has so many classic ideas, you've only got to look at the arts, I once read 90 per cent of the worlds art is in Italy and 75 per cent of that is in Florence!
Well the same must go for their food! Meat and poultry dishes traditionally fell into two categories: one for the wealthy and one for the poor.
The wealthy would use the better cuts of meat, such as veal or steak, whilst the latter relied on long, slow cooking techniques to tenderize the poorer cuts.
Today we enjoy the benefits of both.
