Wild Boar Sausage

Ingredients
- 8 Wild Boar Sausage
- 1 Large onion, finely chopped
- 1 Clove garlic, finely chopped
- 30ml Olive oil
- 6 Medium size 'Waxy' potatoes, peeled and cut into ½ inch (12mm) cubes
- 120 ml water
- Heat 30ml of olive oil in a large saucepan
- Add the onion and galic, cook on medium heat until onions are translucent.
- Take each sausage, gently squeeze in the middle and twist (creating 2 sausages)
- Add the sausages to the saucepan with the onion and garlic, coat the sausages in the oil and cook for 5 minutes.
- Add the potatoes,coat in the oil.
- Pour in the water and bring to the boil.
- Turn down the heat to a gentle simmer, cover and cook for 20 minutes.
- Serve with crusty bread.
