Wild Boar Sausage

Ingredients

  • 8 Wild Boar Sausage
  • 1 Large onion, finely chopped
  • 1 Clove garlic, finely chopped
  • 30ml Olive oil
  • 6 Medium size 'Waxy' potatoes, peeled and cut into ½ inch (12mm) cubes
  • 120 ml water


Method

  • Heat 30ml of olive oil in a large saucepan
  • Add the onion and galic, cook on medium heat until onions are translucent.
  • Take each sausage, gently squeeze in the middle and twist (creating 2 sausages)
  • Add the sausages to the saucepan with the onion and garlic, coat the sausages in the oil and cook for 5 minutes.
  • Add the potatoes,coat in the oil.
  • Pour in the water and bring to the boil.
  • Turn down the heat to a gentle simmer, cover and cook for 20 minutes.
  • Serve with crusty bread.
