Capellini with Asparagus

Ingredients

  • 225g/8oz Capellini(Angel hair)pasta
  • 2 Tbsp Extra virgin olive oil
  • 10-12 Asparagus spears, washed and roughly chopped
  • Small tin Chicken soup
  • 8-10 Small mushrooms, sliced
  • Large pinch chili flakes
  • 55g/2oz Parmesan cheese shavings

Method

  • Cook the pasta in a saucepan of boiling water, according to packet instructions
  • Meanwhile heat the oil in a large frying pan or wok
  • Add the asparagus and saute for a few minutes
  • Add the sliced mushrooms and cook for a few seconds
  • Add the chicken soup and heat through, 2-3 minutes
  • Sprinkle on the chili flakes and stir
  • Drain the pasta and gently mix into the sauce
  • Season with salt, and freshly milled black pepper
  • Sprinkle with Parmesan cheese shavings
