Chorizo mushroom & spicy vermicelli

Ingredients
- 680g/ 1 ½ lb vermicelli dried or fresh
- 125ml/4 fl oz olive oil
- 2 garlic cloves
- 125g/4 ½ oz chorizo, sliced
- 225g/8oz wild or mixed coloured oyster mushrooms
- 3 red chillies
- 2 tbsp freshly grated parmesan cheese
- Salt & pepper
Method
- Bring a large pan of lightly salted water to the boil
- Add the vermicelli and 1 tbsp of the oil and cook until just tender.
- 8-10 mins dried or 2-3 mins fresh vermicelli.
- Cook until tender but still firm to the bite
- Drain and place on a warm serving dish and keep warm
- Heat the remaining oil in a large frying pan
- Add the garlic and fry for 1 minute
- Add the chorizo and mushrooms, cook for 4 mins
- Now add the chillies and cook for a further minute
- Pour the chorizo and mushroom mixture over the vermicelli and season.
- Serve immediately
- Garnish
- Sprinkle over the parmesan cheese and a lattice of anchovy fillets
