Chorizo mushroom & spicy vermicelli

Ingredients

  • 680g/ 1 ½ lb vermicelli dried or fresh
  • 125ml/4 fl oz olive oil
  • 2 garlic cloves
  • 125g/4 ½ oz chorizo, sliced
  • 225g/8oz wild or mixed coloured oyster mushrooms
  • 3 red chillies
  • 2 tbsp freshly grated parmesan cheese
  • Salt & pepper

Method

  • Bring a large pan of lightly salted water to the boil
  • Add the vermicelli and 1 tbsp of the oil and cook until just tender.
  • 8-10 mins dried or 2-3 mins fresh vermicelli.
  • Cook until tender but still firm to the bite
  • Drain and place on a warm serving dish and keep warm
  • Heat the remaining oil in a large frying pan
  • Add the garlic and fry for 1 minute
  • Add the chorizo and mushrooms, cook for 4 mins
  • Now add the chillies and cook for a further minute
  • Pour the chorizo and mushroom mixture over the vermicelli and season.
  • Serve immediately
  • Garnish
  • Sprinkle over the parmesan cheese and a lattice of anchovy fillets
