Pasta with broccoli and peas

Ingredients

  • 8oz/225g Penne pasta, dried or fresh
  • 8oz/225g Broccoli
  • 2 Tbsp extra virgin olive oil
  • 6oz/175g frozen peas, defrosted
  • 5floz/150g creme fraiche or single cream
  • 4oz/100g ricotta cheese
  • Salt and pepper

Method

  • Cook the pasta in a saucepan of boiling water, according to packet instructions
  • Meanwhile, heat the oil in a large frying pan or wok
  • Break the broccoli into small florets and add to the hot oil
  • Cook for a few minutes, stirring
  • Add the defrosted peas and cook for 5 minutes, stirring
  • Slowly add the cream or creme fraiche and simmer for 4-5 minutes
  • Crumble the ricotta cheese into the sauce and stir
  • Drain the pasta and add to the sauce, gently mix together
  • Season with salt and freshly ground black pepper
