Pasta with broccoli and peas

Ingredients
- 8oz/225g Penne pasta, dried or fresh
- 8oz/225g Broccoli
- 2 Tbsp extra virgin olive oil
- 6oz/175g frozen peas, defrosted
- 5floz/150g creme fraiche or single cream
- 4oz/100g ricotta cheese
- Salt and pepper
Method
- Cook the pasta in a saucepan of boiling water, according to packet instructions
- Meanwhile, heat the oil in a large frying pan or wok
- Break the broccoli into small florets and add to the hot oil
- Cook for a few minutes, stirring
- Add the defrosted peas and cook for 5 minutes, stirring
- Slowly add the cream or creme fraiche and simmer for 4-5 minutes
- Crumble the ricotta cheese into the sauce and stir
- Drain the pasta and add to the sauce, gently mix together
- Season with salt and freshly ground black pepper
