Pasta with Tomatoes,basil and capers

Ingredients

  • 6 Large vine tomatoes
  • 250g/8oz Capellini(Angel hair)dried or fresh pasta
  • 2 Tbsp Extra virgin olive oil
  • 2 Garlic cloves, peeled
  • Pinch of chili pepper
  • 1 Tsp capers, washed and drained
  • 1 Tsp dried basil or a handful of fresh
  • Salt and black pepper

Method

  • Cook the pasta in a large saucepan of boiling water, according to the packet instructions until al dente
  • Meanwhile remove the tomato skins and chop roughly
  • Heat the oil in a heavy based pan or wok
  • Add the garlic cloves and cook for a few minutes, until they start to turn golden, then remove them and discard
  • Add the chopped tomatoes and the chili pepper and cook for 2 minutes, no longer
  • Add the drained capers and basil, stir
  • Season to taste
  • Drain the pasta and add to the tomato sauce, stir well to coat the pasta and serve

Equipment

  • Large heavy based pan or wok

Cooks Tip

  • To remove the tomato skins. Place the tomatoes in a bowl of freshly boiled water. Leave for a few minutes, then lift out and the skins will slip off
