Penne Pasta with Pancetta

Serves 2

Cooking Time 12-15 mins
Ingredients
- 200g Penne pasta
- 200g Pancetta cubes
- 100g Frozen peas, defrosted
- 200g Half fat Crème fraiche
- 2 Small onions, finely chopped
- 2 Cloves garlic, finely chopped
- Pinch of grated nutmeg
- Grated Parmesan cheese
- Black pepper
Method
- Cook the pasta according to the packet instructions, usually about 10-12 minutes
- Meanwhile, fry the pancetta in a wok or frying pan for a few minutes until it starts going crispy
- Add the chopped onion and garlic and cook for a few more minutes until the onion has softened, you can add a tablespoonful of olive oil at this stage if needed
- Stir in the crème fraiche
- Stir until heated through for 1-2 minutes, but don’t bring to the boil
- Add the peas to the pasta and cook for a minute
- Drain the pasta and peas and pour into the sauce
- Add the nutmeg and season with black pepper
- Toss the pasta and serve with grated Parmesan cheese
