Wild Mushroom Pizza

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 1lb/5 kg mixed fresh wild mushroom, (such as morel, oyster and shiitake),sliced
  • 1 medium onion, chopped
  • 2 garlic cloves, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 1 package (10 ounces/285g) ready-to-serve thin pizza crust, pizza dough
  • 1/2 cup Parmesan cheese, finely shredded.

Method

  • Heat the oven to 450°F/230°C/gas mark 8.
  • Heat the oil in a large nonstick skillet or frying pan over a high heat.
  • Cook the mushrooms, onion and garlic in oil for about 5 minutes, stirring frequently, until onion is crisp-tender.
  • Stir in the parsley.
  • Spoon the mushroom mixture over pizza crust and sprinkle with cheese.
  • Bake 8 to 10 minutes or until cheese is melted.
