Easy Pasta Sauce

Ingredients
- 2 400g/14oz Tin tomatoes, chopped or whole (see cooks tips)
- 1 250g/9oz Carton chopped pancetta
- 1 Handful of fresh Basil leaves or 1 tsp of dried
- 6 Sundried tomatoes-chopped (optional)
- 6 Black olives-pitted and halved (optional)
- Extra virgin olive oil
- 1-2 tsp Sugar
Method
- Heat a tbsp olive oil in the frying pan
- Add the pancetta
- Fry for a few minutes until it just starts to change colour
- Add the tomatoes and sugar, stir
- Add the sundried tomatoes and olives
- Simmer for 10-15 minutes
- Add the Basil, stir
- Season with black pepper
- Add a little more sugar if needed
- Simmer for about another 10 minutes
- Sauce should be reduced to about half now
Cooks Tip
- If using whole tomatoes just cut out the woody bit at the top, don't worry about chopping them up they will break down during the cooking
- Don't add salt to this sauce-there is enough in the pancetta
- Don't cover the frying pan as this will take the sauce longer to reduce
- By adding the olives it gives the sauce a stronger flavour
- Instead of using 2 tins of tomatoes, you can use 1 and add about 6-8 tbsp of passatta
