Italian Tomato and Basil Sauce

Serves 4

Cooking time 16 mins
Ingredients

  • 2 cloves garlic chopped finely
  • 4 Shallots chopped finely
  • 2 tbsp Olive oil
  • 400g/14oz can Chopped tomatoes
  • Fresh basil (about 8-12 leaves)
  • Salt, black pepper
  • 1 tsp sugar
  • Parmesan cheese freshly grated, to serve

Method

  • Heat the oil in a frying pan or skillet,add the shallots and cook for about 5 minutes,stirring frequently.
  • Add the garlic and cook for 1 minute.
  • Pour in the tomatoes including the juice.
  • Stir in the sugar and season to taste.
  • Bring to the boil until its reduced and thickened.
  • Finally stir in the basil leaves.

  • Skillet/Frying pan

Cooks tip

  • This is the a basic Italian sauce,it goes well with any pasta,or chicken. You can add Pancetta or bacon and cook with the shallots for a variation, it's equally as good.

Ok I tried the recipe and it came out tasting pretty darn good, but I think next time I am going to try it with real tomates and see if it tastes any different. Thanks again!

Shallots are not so much used in Italy, they are more used in French cuisine. Usually we would use onions. Also sugar is never added. Maybe because we have better tomato to start with.
