Soffrito

Cooking Time 15-20 mins
Ingredients
- 1 Large onion, finely chopped
- 3 Large stalks celery, finely chopped
- 3 Large carrots, finely chopped
- 4 Tbsp Extra virgin olive oil
Method
- Heat the olive oil in a heavy based pan
- Add all the Soffrito ingredients and stir
- Gently sweat for 15-20 minutes until translucent, stirring occasionally
- Take off the heat and set aside

Perhaps you should point that soffritto is not a final recepie but a base for other sauces like bolognese or some tomato sauces.
