Soffrito-cooking-with-the-Joneses

Cooking Time 15-20 mins
Ingredients

  • 1 Large onion, finely chopped
  • 3 Large stalks celery, finely chopped
  • 3 Large carrots, finely chopped
  • 4 Tbsp Extra virgin olive oil

Method

  • Heat the olive oil in a heavy based pan
  • Add all the Soffrito ingredients and stir
  • Gently sweat for 15-20 minutes until translucent, stirring occasionally
  • Take off the heat and set aside

Perhaps you should point that soffritto is not a final recepie but a base for other sauces like bolognese or some tomato sauces.
