Italian Tomato and Basil Sauce

Ingredients
- 2 cloves garlic chopped finely
- 4 Shallots chopped finely
- 2 tbsp Olive oil
- 400g/14oz can Chopped tomatoes
- Fresh basil (about 8-12 leaves)
- Salt, black pepper
- 1 tsp sugar
- Parmesan cheese freshly grated
Method
- Heat the oil in a frying pan or skillet,add the shallots and cook for about 5 minutes,stirring frequently.
- Add the garlic and cook for 1 minute.
- Pour in the tomatoes including the juice.
- Stir in the sugar and season to taste.
- Bring to the boil until its reduced and thickened.
- Finally stir in the basil leaves.

- Skillet/Frying pan
Cooks tip
- This is the a basic Italian sauce,it goes well with any pasta,or chicken. You can add Pancetta or bacon and cook with the shallots for a variation, it's equally as good.

Ok I tried the recipe and it came out tasting pretty darn good, but I think next time I am going to try it with real tomates and see if it tastes any different. Thanks again!
