Italian Soup Recipes

When every Italian family has their own soup creation it's not difficult to find a good one, the hard part is choosing which one you want to make! None of their soups or appetizers are definitive, so we can feel free to experiment.


The best known soup is minestrone (ministra simply means soup) but there are so many other wonderful creations usually depending on the produce of that particular region. Beans feature widely in Tuscany, whilst it's tomatoes in Campania and greens in Puglia.
I remember when we first went to Tuscany and we found a beautiful little restaurant in the hills, I asked for Tomato soup as a starter and got a bowl of bread soaked in tomatoes!!! My face was a picture of shock as it looked like a bowl of stodge!! But it was absolutely delicious. I will try to find the recipe for this….you have to try it.
