Well, with all good intensions of surprising my friend with box of chocolate brownies on her birthday. It didn’t happen.
My car decided it would die on that particular day! As I watched it go up the road on the tow-away truck I felt it saying to me “you ain’t going anywhere!” So I had a quick rethink.
Invited her to dinner at mine.
Cooked a roast chicken dinner with all the trimmings followed by homemade ice cream. Problem solved!
However, I did make the brownies the following day and turned up at her house as pre planned.
Was she pleased? Yes!
So here’s the recipe as promised:
250g/9oz Butter
500g/1lb 2oz Caster sugar
100g/3½oz Cocoa powder
4 Beaten eggs
100g/3½oz Self raising flour

Melt the butter in a medium saucepan over a low heat.
Add the sugar and cocoa powder and cook gently for a few minutes, stirring constantly until dissolved and heated through.
Take off the heat and pour mixture into a mixing bowl.
Allow to cool slightly.
Stir in the beaten eggs and fold in the flour.
Pour mixture into lined (greaseproof paper) 8”x10”/20cm x 25cm baking tray.
Bake in oven for 35-40 mins at 180°C/350°F/Gas mark 4, until just firm.
It should be squidgy in the middle.
Allow to cool and turn out onto a clean board.
Cut into 2”/5cm squares.

You’ll need a good cocoa powder for this recipe. Green & Blacks Organic is 100 per cent cocoa.
Shame Baz didn’t get home in time to eat one!
p.s. Robins are still nesting in the garden, despite a very strong interest from the neighbourhood cat! I’m trying to persuade Baz to rig up a webcam so we can see the babies. I’ll wait until he’s finished sulking over the brownies.

I remember the first time you came to let me sample one… They are absolutely awesome. As a cake lover I give your brownies 10 out of 10.
I will attempt them myself…
