Got home from work.
Friends from Spain had emailed, (knowing Les would be on the computer all day).
"We've got mussels, what do we do with them?"
"Tried your site but they weren't on there!!"
I got straight on the computer and hit the reply button.
"Hi guys don't panic. It will be on there by the end of the week, in the meantime follow this".
Bag of mussels (1 kilo), wash and clean them.
Any that are open, give a quick tap with the back of the knife, if they won't open, chuck!
Get a deep saucepan and add a knob of butter (1oz).
Finely chop a medium size onion and finely chop 1 or 2 garlic cloves.
Melt the butter and add onion and garlic.
I know you both like your food hot, so you can add a finely chopped chilli at this point, not too much.
Once the onion is translucent, pour into the saucepan ½pint of white wine and bring to the boil.
Add the mussels and cook for 2-3 minutes. All the shells should be open. Any that don't, chuck!
Don't forget the crusty bread
