Family Reunion

After saying goodbye to Baz’s cousin who was flying home to Oz we were invited to a family B.B.Q which seemed very fitting as our niece is off to Australia, backpacking for a year. It felt like one in, one out. We had time off cooking this time! Which was nice. Lots of chicken and yummy cheese burgers and great sunny weather. This makes a nice change for England.

I followed on the B.B.Q theme last night with inverted cheese-burgers. So today I wanted to make something for tonight’s dinner with the left-over’s. We had some salad and blue cheese in the fridge so my mind is thinking Cheesy Stuffed Aubergines(Eggplant). I’ve done them before with minced lamb but I wanted a “no meat” dinner today.

I’m sure vegetarians will know this dish or something similar; I really must get a vegetarian cookbook. Not that I’m going vegetarian but I’m sure it will be very helpful with some interesting accompaniments to meat and fish.
