After heaps of cooking over the past few weeks I was looking forward to a day out in London with friends, we’d been invited to see ViCE perform in Leicester Square.

Weather was going to be a scorcher 30 degrees, so armed with foot spray, face wipes, bottles of water etc we made our way to North London, why North London? Well, lunch first right?
Good old friends’ daughter has made us Chilli con carne to keep us going, well actually her boyfriend made it; otherwise it would have been toast! (I have to speak to her about the “cooking thing”) My friend did remind me the kids grew up with a sign in the kitchen that said “If you can’t smell burning, it’s salad”!
Quick hop on a bus, then a short train ride, we arrived!
It was Gay Pride Week with events all over London and although we didn’t have time to catch all of them, as we would have really loved to have seen Heather Small and Jimmy Somerville perform in Hyde Park, we did catch Boy George on stage in the Square, who came on straight (excuse the expression) after ViCE.

It was quite a challenge to get some decent photos, being so short doesn’t help!

Then home, Baz had made us all a curry, but we left it marinating in the fridge (too tired) and just ate a light supper of roasted tomatoes dressed in garlic, olive oil and balsamic vinegar, served with hot French crusty bread, which was enough, so no guesses for Sunday’s dinner.
Roasted tomatoes dressed in garlic, olive oil and balsamic vinegar

Serves 4
Prep Time 5 mins
Cooking Time 20 mins
Ingredients
- 8 Large tomatoes, sliced
- 3 Medium garlic cloves, finely chopped
- Handful of fresh chopped basil
- 4-5 Tbsp Extra virgin olive oil
- 1-2 Tbsp Balsamic vinegar
Method
- Slice the tomatoes in half
- Lay in a medium size baking tin
- Sprinkle the chopped garlic over the tomatoes
- Mix the olive oil and the vinegar together in a container and shake vigorously (see Cooks tips 1.)
- Add the basil to the mixture, to infuse (see Cooks tips 2.)
- Pour over the tomatoes
- Bake in a pre heated oven 425°F/ 220°C/Gas mark 7 for 20 mins
Cook's tips
- 1. It doesn’t really matter if you’re a bit over with the oil or vinegar, as long as it’s roughly one third vinegar to two thirds olive oil
- 2. If you infuse the basil in the oil and vinegar it will prevent it burning

You two take the most interesting trips! Lol–I think I live a little vicariously through your blog. I’ll try this tomato recipe. I’m still getting some fresh tomatoes from my 4 plants.

It’s the food we like that goes on the blog~we don’t get fed up with it, we only wish we had more time to put more Italian on :0)
