Grape & Kiwi Crunch

Ingredients
- 12oz/325g Seedless grapes
- 3oz/75g Crushed digestive biscuits
- 2 Egg whites
- 3oz/75g Caster sugar
- 3floz/90ml Dry white wine
- 2tbls Brandy
- 10floz/300ml Double/heavy cream
- 1 Kiwi fruit peeled & sliced
Method
- Divide half the grapes between 4 dessert glasses
- Cover with half the biscuits
- Add the remaining grapes
- Sprinkle over the rest of biscuits
- Whisk egg whites until stiff
- Whisk in half the sugar then fold in the rest
- Fold in wine and Brandy
- Whip cream until just thickened
- Gradually whisk in the egg white mixture, beating until smooth and light
- Pour over grapes and biscuit mixture
- Chill until ready to serve
- Just before serving top with kiwi slices
