Waffleberry Pudding

Ingredients

  • 2 Pkts 240g/9oz (each packet) sweet waffles
  • 150g/5 ½oz White chocolate, coarsely chopped
  • 300g/10½oz Frozen raspberries
  • 55g/2oz Caster sugar
  • 1 Tbsp plain flour
  • 500ml/18fl oz Crème fraiche
  • 3 Large free range eggs
  • Few drops vanilla extract
  • 2 Tbsp icing sugar

Method

  • Cut waffles into 2.5cm/1inch pieces
  • Coarsely chop white chocolate
  • Place waffles in dish
  • Sprinkle over half of the chopped chocolate and half of the raspberries
  • Repeat the layers
  • Combine the caster sugar and flour in a bowl
  • Add the crème fraiche, eggs and vanilla extract
  • Whisk together and spoon evenly over the waffle, chocolate and raspberries
  • Bake in a preheated oven 200°C/400°F/Gas mark 6 for 30-35 mins
  • Remove from oven and allow to cool for 10 mins
  • Sprinkle the icing sugar over the top

Welll, this sounds delicious (definitely not diet!), and I’m tempted to try it, but I have a couple questions. Is Caster sugar the same as our white granulated sugar? And is creme fraiche canned sweetened milk or canned evaporated milk or half and half? It sounds delicious, whichever it is!

btw, I posted two great candy recipes today that you might enjoy trying if you haven’t had them before — chocolate peanut clusters done in a crock pot and cranberry orange fudge.

Hmmm. I think I just gained a pound leaving this comment about all this rich food! :)

Hi Sandra,
In the USA caster sugar is called superfine. Creme fraiche just means fresh cream in French. It’s thick & tangy, similar to sour cream, however it is smoother and richer. You could use USA cream, (but not a heavy one) as long as you can cook it, but it will put the calories up. hope that helps :o)
