Cheese burgers the joneses way

Ingredients
- 1lb/450g good minced (ground) beef
- 1 Large onion-finely chopped
- 2oz/60g Sun dried tomatoes-finely chopped
- 2oz/60g Halloumi cheese
- 2oz/60g Cheddar cheese
- 1 egg-beaten
- Salt
- Freshly ground black pepper
Method
- Mix the chopped onion and tomatoes with the minced beef
- Add the beaten egg to the mixture and season
- Combine the ingredients together with your hands until thoroughly incorporated
- Divide the meat mixture into 4 equal portions
- Mould into round shapes
- Make a deep well in the middle of each burger
- Either grate the cheeses or put into a food processor and blitz for a few seconds
- Mould the cheeses in to 4 ball shapes
- Place 1 ball in each burger well
- Pull the meat gently over the cheese
- Pat the burger in your hands to form the burger shape
- Cook on the B.B.Q. or griddle for about 10 mins each side
- Turn carefully and frequently
Cooks Tip
- I used Halloumi cheese this time and it works extremely well
- I have made them with Roquefort and Cheddar
- The mixture of a strong and milder cheese just blends well together
Garnish
- Serve with toasted sesame buns and a crisp green salad with beetroot
