Chicken Maryland
This is a variation on Chicken Maryland. We share this dish with friends who are not on a diet as it is quite high in the old calories!!
But sooooooo yummy.
Serves 4

Ingredients
- 1 tin condensed Chicken soup
- 1 tin condensed Mushroom soup
- 4 Chicken breasts
- 1/2 pint Mayonnaise
- 1/2 pint Double cream
- 8 small florets of Broccoli
- 12 small Mushrooms
- 4oz/114g good cheddar cheese, grated
- 2 packets plain crisps, crunched
- Chilli powder
- Olive oil
Method
- Cut the chicken into bite size pieces
- Sprinkle chilli powder over the chicken
- Fry chicken until golden brown, stirring frequently
- Blanch broccoli florets
- Lightly saute mushrooms
- Transfer mixture to an oven dish
Sauce
- Mix together the cream, soup and mayonnaise
- Add 2 tsps of medium curry powder
- Pour over the broccoli mixture
- Sprinkle with grated cheese
- Cover with the crunched crisps
- Bake in oven for 40 minutes 350F/180C/Gas 4
Cooks Tip
- We find Cross and Blackwell condensed soups work the best
- Double cream can be omitted it will still taste delicious
- Add more broccoli and mushrooms if desired
