Chicken Maryland

This is a variation on Chicken Maryland. We share this dish with friends who are not on a diet as it is quite high in the old calories!!

But sooooooo yummy.

Serves 4

Ingredients

  • 1 tin condensed Chicken soup
  • 1 tin condensed Mushroom soup
  • 4 Chicken breasts
  • 1/2 pint Mayonnaise
  • 1/2 pint Double cream
  • 8 small florets of Broccoli
  • 12 small Mushrooms
  • 4oz/114g good cheddar cheese, grated
  • 2 packets plain crisps, crunched
  • Chilli powder
  • Olive oil

Method

  • Cut the chicken into bite size pieces
  • Sprinkle chilli powder over the chicken
  • Fry chicken until golden brown, stirring frequently
  • Blanch broccoli florets
  • Lightly saute mushrooms
  • Transfer mixture to an oven dish

Sauce

  • Mix together the cream, soup and mayonnaise
  • Add 2 tsps of medium curry powder
  • Pour over the broccoli mixture
  • Sprinkle with grated cheese
  • Cover with the crunched crisps
  • Bake in oven for 40 minutes 350F/180C/Gas 4

Cooks Tip

  • We find Cross and Blackwell condensed soups work the best
  • Double cream can be omitted it will still taste delicious
  • Add more broccoli and mushrooms if desired
