Yes, slow roasted… awesome, these are the best cuts but alot of people DO turn their noses up, because they aren’t “pretty” Oh well, more for us!

I buy mine from the butcher at our local market, but you could try any Farmers Market. Cost is £5.00 here. Yes it should be fresh if you use a reputable butcher…

Hand of pork – Truly scrumptious! I used to buy this many years ago when bringing up 2 daughters as a single Mum on a very low budget. Nowadays this is rarely asked for at my local butchers – it’s the cut they use to make their sausages! (probably why their bangers are so good!)
This is my choice for Christmas dinner this year as it is superb and so easy to cook – Oh, and cheap (Cost me £9 for a good size joint – I did ask for the smallest piggy hand!) Slow cooking at 160 degs (uncovered) after seasoning and light brushing with olive oil and lightly salting the scored skin. Some halved onions under the joint will caramelise and are delicious. Give it around 3 – 4 hours, then stick up the heat to 200 degs. Put your spuds, some garlic cloves and other root veg around the joint. I promise you will be assured of success! Succulent and full of flavour, with plenty of meat….Yummy! Happy Christmas 2011
