BLT Salad

Ingredients
- 8 Rashers streaky bacon smoked or unsmoked
- 4oz/110g Cherry tomatoes
- Olive oil
- 1/2 Loaf focaccia or ciabatta cut into 1.5cm/1inch chunks
- 4 Plum tomatoes
- 4 tbsp Mayonnaise
- 2 tbsp Water
- 1 tbsp Whole grain mustard
- 1×225g/8oz pack of mixed leaf salad leaves
- Salt and freshly ground black pepper
Method
- Preheat the oven to 200C/400F/gas mark 6
- Stretch the bacon on a chopping board with the back of a knife and place on a baking tray with the cherry tomatoes
- Bake until the bacon is crisp and brown
- Remove the tomatoes after 5-6 minutes
- Heat the oil (1cm/1/2in deep) in a heavy based pan
- Fry the bread cubes, a handful at a time until golden brown
- Drain on absorbent paper
- Sprinkle with a little salt. Keep warm
- Slice the plum tomatoes
- Whisk together the mayonnaise, water and mustard and season
- Toss together the salad, dressing, plum tomatoes salt and pepper, and crumble bacon pieces into salad
- Pile onto plates and garnish with croutons
- Serve with the remaining Italian bread
Cooks Tip
- You can serve this as delicious brunch on its own or use as a side dish with burgers and buns then friends can help themselves to filling.
- Omit the croutons/bread if using as a filling
