Tomato Salad

Ingredients

  • 4 Large tomatoes cut into 6mm/ ¼" slices
  • 1 Clove garlic, finely chopped
  • 6 Fresh basil, finely chopped
  • 4 tbsp Extra virgin olive oil
  • 2 tbsp Balsamic vinegar

Method

  • Arrange the tomatoes evenly, in a shallow dish
  • Sprinkle the garlic and basil over the tomatoes
  • Mix the extra virgin olive oil with the balsamic vinegar
  • Pour over the tomatoes
  • Cover the tomatoes with Clingfilm and place in the fridge for a minimum of 30 minutes
  • Season with salt and freshly ground black pepper
  • Remove from fridge and garnish with chopped parsley and fresh basil leaves
  • Serve as a side salad or with Crusty Italian Bread

Cooks Tip

  • Mix the extra virgin olive oil with the balsamic vinegar in a container with a lid
