Tomato Salad
Serves 2

Ingredients
- 4 Large tomatoes cut into 6mm/ ¼" slices
- 1 Clove garlic, finely chopped
- 6 Fresh basil, finely chopped
- 4 tbsp Extra virgin olive oil
- 2 tbsp Balsamic vinegar
Method
- Arrange the tomatoes evenly, in a shallow dish
- Sprinkle the garlic and basil over the tomatoes
- Mix the extra virgin olive oil with the balsamic vinegar
- Pour over the tomatoes
- Cover the tomatoes with Clingfilm and place in the fridge for a minimum of 30 minutes
- Season with salt and freshly ground black pepper
- Remove from fridge and garnish with chopped parsley and fresh basil leaves
- Serve as a side salad or with Crusty Italian Bread
Cooks Tip
- Mix the extra virgin olive oil with the balsamic vinegar in a container with a lid
