Scallops

Makes 4 Starters or 2 main course
Prep Time 10 mins
Cooking Time 10 to 15 mins
Ingredients
- 8 Fresh scallops
- 2lb/900g Potatoes, peeled and quartered
- 2 x 200g packs Spinach
- 4oz/100g Slightly salted butter
- 4 Tbsp Semi skimmed milk
- 1 Clove garlic, crushed
Method
- Boil the potatoes until cooked, drain then use either a potato masher or an electric whisk to mash into a creamy texture with the milk and 2oz/50g butter, cover and set aside
- Steam the spinach for a few minutes until cooked, cover and set aside
- Heat 2oz/50g butter until melted in a large wok
- Add the garlic, stir for 30 seconds, then remove the garlic from the wok
- Add the scallops and sear for one minute, turn the scallops over and cook for a further 30/60 seconds
- Arrange the potato and spinach on a clean plate
- Spoon the scallops on top
- Pour the cooking juices over the scallops

This looks delicious guys! I’ve been looking for something more exciting to do with fish and this is my next experiment :o)
