Pasta with Tomatoes,basil and capers

Ingredients
- 6 Large vine tomatoes
- 250g/8oz Capellini(Angel hair)dried or fresh pasta
- 2 Tbsp Extra virgin olive oil
- 2 Garlic cloves, peeled
- Pinch of chili pepper
- 1 Tsp capers, washed and drained
- 1 Tsp dried basil or a handful of fresh
- Salt and black pepper
Method
- Cook the pasta in a large saucepan of boiling water, according to the packet instructions until al dente
- Meanwhile remove the tomato skins and chop roughly
- Heat the oil in a heavy based pan or wok
- Add the garlic cloves and cook for a few minutes, until they start to turn golden, then remove them and discard
- Add the chopped tomatoes and the chili pepper and cook for 2 minutes, no longer
- Add the drained capers and basil, stir
- Season to taste
- Drain the pasta and add to the tomato sauce, stir well to coat the pasta and serve

- Large heavy based pan or wok
Cooks Tip
- To remove the tomato skins. Place the tomatoes in a bowl of freshly boiled water. Leave for a few minutes, then lift out and the skins will slip off
