Spinach spaghetti with Prawn Sauce

Ingredients

  • 8 tbsp olive oil
  • 350g/12oz button mushrooms, sliced
  • 350g/12oz large shelled prawns(raw)
  • 40g/1 ½ oz sun dried tomatoes finely chopped
  • 2 tbsp lemon juice
  • 10 spring onions, sliced
  • 3 tbsp chopped fresh basil
  • salt and freshly ground black pepper
  • 250g/9oz  spaghetti verdi

Method

  • Heat the oil in a large frying pan until almost smoking.
  • Add the mushrooms and stir-fry for 2 mins
  • Add the prawns and sun dried tomatoes and stir-fry for 3 mins
  • Add the lemon juice and onions and stir-fry for 3 mins
  • Stir in the basil and season to taste
  • Cook the pasta in boiling water until ‘al dente’
  • Drain and toss with half the sauce, transfer to serving dish
  • Spoon the rest of the sauce over the top
  • Serve immediately
