Spinach spaghetti with Prawn Sauce

Ingredients
- 8 tbsp olive oil
- 350g/12oz button mushrooms, sliced
- 350g/12oz large shelled prawns(raw)
- 40g/1 ½ oz sun dried tomatoes finely chopped
- 2 tbsp lemon juice
- 10 spring onions, sliced
- 3 tbsp chopped fresh basil
- salt and freshly ground black pepper
- 250g/9oz spaghetti verdi
Method
- Heat the oil in a large frying pan until almost smoking.
- Add the mushrooms and stir-fry for 2 mins
- Add the prawns and sun dried tomatoes and stir-fry for 3 mins
- Add the lemon juice and onions and stir-fry for 3 mins
- Stir in the basil and season to taste
- Cook the pasta in boiling water until ‘al dente’
- Drain and toss with half the sauce, transfer to serving dish
- Spoon the rest of the sauce over the top
- Serve immediately
