Baz’s Special Pizza

Ok this is the one that's the long way round, but it does it taste good!!
Serves 4-6 servings

Cooking time 25 mins
Ingredients
- Pizza dough (basic pizza dough)
Ingredients for the topping
- 1 tbs Extra virgin olive oil
- 1 small onion, finely chopped
- 440g/14oz Can of chopped tomatoes, undrained
- 1 Clove garlic,crushed
- 1 tsp Oregano
- 2 tbs Tomato puree or passata
- ½tsp Dried basil or 12 fresh leaves, chopped
- ½Small red pepper
- ½Small green pepper, both deseeded and chopped.
- 4 Medium mushrooms, thinly sliced
- 60g/2oz Can anchovy fillets, drained
- 250g/8oz Mozzarella cheese, grated
- 60g/2oz Parmesan cheese, grated
- 60g/2oz Black olives, pitted and sliced
- ½tsp sugar
- ½tsp salt
Method
For the topping
- Heat the olive oil in a large saucepan.
- Add the onion and cook for about 5 minutes until soft.
- Add the garlic and cook for 30 seconds.
- Add the tomatoes and their juice, tomato puree, oregano, basil, sugar, salt and freshly ground black pepper.
- Bring to the boil over a high heat, then reduce to moderate and simmer for about 15 minutes, until it thickens, stirring occasionally. Pour into a bowl and let cool.
- Finally the topping.
- Preheat the oven to 450°F/230°C/gas mark 8.
- Spread the tomato sauce over the dough base.
- Sprinkle over 2/3rds of the cheeses together.
- Arrange the peppers, mushrooms, anchovies on top.
- Sprinkle the remaining cheeses on top.
- Top with sliced olives
- Bake for about 20 minutes or until crust is nicely browned.
