Pizza with Tomato and Anchovy

Ingredients

  • 1 Pizza base(Thin Pizza base)

For the topping

  • 100g/3 1/2oz Anchovies(see Cooks Tip)
  • 400g/14oz Tomatoes
  • 200g/7oz Mozzarella cheese or grated Gruyere
  • Extra Virgin olive oil
  • Oregano
  • Salt and pepper

Method

  • Spread the olive oil over the pizza base.
  • Peel, deseed and dice the tomatoes, sprinkle over with olive oil.
  • Cut the cheese into small pieces and arrange on pizza, followed by anchovies.
  • Season, then drizzle with a little more olive oil.
  • Sprinkle with oregano.
  • Cook in an oven preheated to 450°F/230°C/gas mark 8 for 10 minutes.

Equipment

  • 12" Round pizza tray

Cooks tip

  • If using tinned anchovies, drain and slice.
  • If you haven't got a 12" pizza tray use a baking tray to the nearest size, but remember the recipe is designed to fit a 12" round tray.
  • You can use a 400g tin of strained chopped tomatoes if you haven't got fresh ones
  • If you're using a 6" bought pizza base refer to packet instructions for cooking times, ( usually about 15 mins)
