Pizza with Tomato and Anchovy

Ingredients
- 1 Pizza base(Thin Pizza base)
For the topping
- 100g/3 1/2oz Anchovies(see Cooks Tip)
- 400g/14oz Tomatoes
- 200g/7oz Mozzarella cheese or grated Gruyere
- Extra Virgin olive oil
- Oregano
- Salt and pepper
Method
- Spread the olive oil over the pizza base.
- Peel, deseed and dice the tomatoes, sprinkle over with olive oil.
- Cut the cheese into small pieces and arrange on pizza, followed by anchovies.
- Season, then drizzle with a little more olive oil.
- Sprinkle with oregano.
- Cook in an oven preheated to 450°F/230°C/gas mark 8 for 10 minutes.

- 12" Round pizza tray
Cooks tip
- If using tinned anchovies, drain and slice.
- If you haven't got a 12" pizza tray use a baking tray to the nearest size, but remember the recipe is designed to fit a 12" round tray.
- You can use a 400g tin of strained chopped tomatoes if you haven't got fresh ones
- If you're using a 6" bought pizza base refer to packet instructions for cooking times, ( usually about 15 mins)
