Wild Mushroom Pizza

Ingredients
- 1 tbsp Extra virgin olive oil
- 1lb/5 kg mixed fresh wild mushroom, (such as morel, oyster and shiitake),sliced
- 1 medium onion, chopped
- 2 garlic cloves, finely chopped
- 2 tbsp fresh parsley, chopped
- 1 package (10 ounces/285g) ready-to-serve thin pizza crust, pizza dough
- 1/2 cup Parmesan cheese, finely shredded.
Method
- Heat the oven to 450F/230C/gas mark 8.
- Heat the oil in a large nonstick skillet or frying pan over a high heat.
- Cook the mushrooms, onion and garlic in oil for about 5 minutes, stirring frequently, until onion is crisp-tender.
- Stir in the parsley.
- Spoon the mushroom mixture over pizza crust and sprinkle with cheese.
- Bake 8 to 10 minutes or until cheese is melted.
